  锅包肉 原料

  猪瘦肉 调料:油、盐、酱油、白糖、花椒水、醋、味精、淀粉、葱片、姜末、蒜片。 制作过程

  1.将肉切成一分半厚的大薄片,用开水氽一下,捞出控净水,用浓淀粉糊抓匀

  2.用碗加酱油、白糖、醋、盐、味精、花椒水对成清汁待用

  3.坐勺,加油烧至

  七、八成热时,将肉片抻开逐片下入油中炸呈金黄色捞出,待油温升至

  八、九成热时,再将肉片冲炸一次,捞出控净油

  4.原勺留底油,用葱、姜、蒜炝锅,放入肉片,烹入对好的清汁,速出勺装盘即可

  注意:

  烹汁要少、要快,成品盘内无汁。(对汁时不要加淀粉)

  溜肉段

  材料:

  猪瘦肉四两。配料:黄瓜二钱,冬笋片二钱。

  调料:香油一钱,淀粉二两,味素五分,酱油五钱,醋三分,白糖二钱,绍酒一钱,精盐,葱,姜,蒜各少许。

  (2)用一小碗加绍酒、香油、白糖、醋、味素、酱油、淀粉对好汁卤备用。

  (3)勺内汁卤加宽油,烧至七层热时,把肉段下勺内炸成金黄酥脆时捞出。

  (4)大勺少留底油,下葱、姜、蒜、黄瓜片、冬笋片炒几下,放炸好的肉段,再把对好的汁卤泼入勺内,颠翻几个个,滴香油出勺装盘。

  溜肉段的特色:

  红烧肘子

  原料:主料肘子1000克。

  制作过程

  1、选皮薄、毛孔细小的新鲜肘子,剔去骨头,修整成圆桃形状。

  3、将油锅烧热,把肘子皮朝下炸呈黄色,炸时不停地翻动,以防糊底。

  4、炸好肘子捞出,放一碗内,加葱、姜,用卤汤对些水,浇入碗中,上屉蒸烂。

  5、将蒸好的肘子扣入大盘内,汤沥在久中,加入料酒、味精,调一下色味,开始勾芡,撒上青蒜段,淋入明油,浇在肘子上即成。 梅干菜扣肉

  材料:

  油2汤匙、酱油4汤匙、八角1粒、五花肉1斤半、梅干菜1杯(切碎)、葱、姜各少许、糖、酒各1汤匙

  做法:

  1、五花肉整块加水及葱、姜、八角煮40分钟,取出擦乾外皮水份,泡入酱油中泡10分钟。

  2、烧热油后,放下五花肉(皮朝下)大火炸黄皮部,捞出后泡入冷水中约10分钟,至外皮起泡且回软,取出切成半公分厚片,排入蒸碗中。

  3、梅干菜用水漂洗乾净,捞出,挤乾水份。烧热2汤匙油,放下梅干菜炒香,加入剩下之酱油、糖、酒及煮肉汤1杯,全部倒在五花肉上,上锅蒸一个半小时以上至肉够烂为止。

  4、泌出汤汁,扣出肉到盘中,汤汁勾芡后林到肉上即可。

  酱牛肉

  原料:

  牛前腿键子肉1500克、葱50克、姜30克、盐15克、糖10克、料酒30克、酱油30克、五香粉15克、香叶4片、花椒5克、丁香2克、小茴香3克、陈皮4克、甘草5克、桂皮5克、八角6瓣、清水适量。 做法:

  1、将牛肉洗净,沿筋络纹路切成大块后备用。

  2、取干净纱布一块,将丁香、花椒、八角、陈皮、小茴香、桂皮、香叶、甘草包在其中制成香料包备用。

  3、葱切大点的段、姜拍破备用。

  4、锅中做清水,80度时入牛肉煮开后再大火煮1分半钟左右。

  5、将牛肉从开水锅中捞出后放入凉水中备用。

  6、锅中再做清水,开锅后下入香料包、糖、葱、姜、酱油和五香粉。

  7、重新开锅之后入牛肉大火做开。

  8、变小火将牛肉烧熟后将香料包取出后关火。

  9、将牛肉和剩余的肉汤一起倒入容器中放至完全凉透。

  10、将牛肉取出切成薄片即可食用。

  酱大骨头 做法:

  1. 将大块猪大骨棒略洗,置大盆中加满清水浸泡约3-6小时,中间可换水数次,若室温较高,可将盆放入冰箱冷藏室内,以防猪肉变质。

  2. 将泡净血水的大骨棒冲洗数遍后置大锅中加水没过猪骨,加生姜数块(拍破),葱数根打结,八角(大料)几颗,花椒一小把,桂皮一小块,香叶2片(可无),十三香少许(可无),绍酒,老抽,酱油,炒好的糖色,白糖,豉汁或优质黄豆酱适量(可无)。

  3. 大火烧至汤开后打净浮末,加精盐适量(卤汁需较咸才能使酱好的骨头充分入味,故用盐量较大),转中小火加盖焖煮约1小时。

  4. 加鸡精适量,转中—大火敞盖炖约30分钟 (目的是将汤汁略收,使肉骨头进一步入味)后即可。

  酱汁猪蹄

  原料:

  猪蹄, 姜, 蒜, 葱, 四川辣豆瓣酱, 香料(八角, 茴香, 山奈, 桂皮, 丁香, 草果, 香叶), 豆瓣酱,干辣椒,花椒(根据个人口味添加, 也可不加), 酱油(老抽), 白糖, 盐, 味精, 啤酒(有人做这道菜买了7只猪蹄, 用了一瓶550ML的啤酒), 水淀粉, 食用油

  做法:

  1.将猪蹄洗净, 每只猪蹄一分为4然后放入沸水中煮至断生然后捞起洗净待用.

  2. 姜切片, 剥好的蒜粒从中间一刀切下一分为二.(这道菜属于味重型, 姜蒜的用量不能少)

  3. 锅内烧油至6层热, 倒入四川辣豆瓣酱炒干水份, 然后下入姜蒜, 香料, 干辣椒和花椒, 小火炒出香味, 接着掺入清水, 待烧开后依次加入盐, 少许白糖, 酱油(要适量, 只要汤料变成那种很深的酱红色就可以了), 啤酒, 然后把准备好的猪蹄下入锅中, 小火慢慢炖至粑软然后捞起放入容器中, 再用大火烧开汤料, 捞去里面的各种佐料, 加入味精, 倒入水淀粉勾芡, 再将汁淋于猪蹄上, 最后撒上葱花即可。

  红烧肉

  1、 把五花肉一块块先放油锅里炸炸,这样皮和肥的部分即可以去去油也可以炸得脆脆的有些吃头。炸好的肉捞出来放一边。

  2、 放点干辣椒、葱姜进油锅炸炸,再把肉倒进来。接着就放点黄酒、多放点糖,少放点盐,然后放点酱油。

  3、 放了酱油后,也可以再放点儿醋,不过不要多。另外别忘了可以放两个八角。一切放好后,翻炒一阵,等油烧得滋滋的时候再放水。这个水很重要,千万不能多,一多就泡汤了。每次放一勺就足够了,只要不让肉沾锅就可以。

  4、 开小火,慢慢烧着,中间记得翻几次身,水不够的时候再稍微加一点点水。这样盖了锅盖来回折腾个把小时,估计就大功告成了。这样烧出的红烧肉颜色特别亮,味道也足够,最重要的是肉里面的油绝对已经给熬出来了,吃起来的口感一流啦。 红烧肉之家庭做法

  1、 首先选择五花肉若干,切成3厘米长,1厘米宽的块,大小尽可能均匀。记住,一定要将毛去干净,用水反复洗净。(否则肉有怪味)。

  2、 准备调料:葱,切段;蒜,每瓣只切一刀;姜,切块;花椒,若干;大料,两个;桂皮,一小块。这些放入碗中备用。

  3、 取铁锅一只,放于火上,加水,烧开,将肉放入锅中,去除浮沫,待肉略硬,取出,沥干水。(这样也可以去除肉的怪味)。

  4、 取沙锅一个,略加一点儿水,放于火上。

  5、 取铁锅一只,放于火上,锅热,加油适量,油热后,加糖若干,此时,铲子要不停的搅动,当油中沫翻起又下去的时刻,下入肉,不停翻动,使肉均匀上色。(糖的火候莆蘸?否则极难吃)

  6、 将调料放入锅中,翻炒,略加一点酱油。

  7、 将肉盛入沙锅,添青水适量。煮。

  8、 开锅后,关小火,50分钟左右。第九加入料酒,盐,再煮15分钟。第十盛出,吃!各部分选料要掌握好量,多练几次,会更好。此法极适合家庭制作。

  近年来,在商务部领导和市场秩序司的具体指导下,上海市商务委按照商务部《全国肉类蔬菜流通追溯体系建设规范(试行)》(以下简称《建设规范》)标准要求,积极推进肉品和蔬菜流通追溯体系建设,初步形成以肉类和蔬菜为重点的流通领域食品安全可追溯体系。

  一、基本情况

  上海肉菜追溯体系建设共纳入试点企业987家,其中:725家标准化菜市场、193家大卖场、13家生猪屠宰场、12家肉类批发市场、16家肉类配送企业、18家蔬菜批发市场、10家团体采购企业。

  肉菜追溯品种覆盖4个肉类品种和近200个蔬菜品种。肉类日批发交易量约2000吨,在批发、零售(标准化菜市场和大卖场)环节肉类追溯系统基本实现全覆盖;蔬菜日批发交易量约8000吨,预计批发、零售环节(标准化菜市场和大卖场)环节蔬菜追溯系统覆盖率分别可达到90%、40%以上。

  二、系统建设技术模式

  追溯系统是利用现代技术对供应链部分或全过程的每一个节点进行有效的标识或信息关联,建立各个环节信息管理、传递和交换。根据目前肉菜流通特点,对相关信息的获取、关联、传输以及管理是成功开展追溯的关键;实施食品追溯,要求系统具有“可靠、快速、精确、一致”的特点,从而最终达到肉菜正向追溯与反向溯源。

  (一)肉类追溯体系

  肉类商品追溯关键是针对“现斩现卖”消费特征,如何将生猪屠宰、批发、零售三大环节组成一个信息链,是肉类商品信息追溯的技术关键。

  以猪肉流通安全信息监管、追溯为目的,以应用系统开发、系统集成、信息整合、信息采集为基础,以数据库建设为核心,以互联网为支撑,IC卡为信息载体,标签电子秤为零售输出,做到实用性、系统性、兼容性以及可扩展性。

  技术模式采用以互联网为支撑,将屠宰、批发、零售三大环节信息汇集数据中心。各环节上下游信息对接采用IC卡为信息载体,链接三个环节信息,形成一个环节内环型追溯链、上下游环节链型追溯链。各环节应用开发不同硬件设备,屠宰环节应用IC卡射频技术;批发环节采用电子单轨衡、电子标签、工控级理货机等专用技术;零售终端采用溯源电子秤技术。

  2、肉类追溯主要流程

  (1)生猪屠宰场猪肉流通安全信息追溯系统:系统从生猪进屠宰场、加工、检疫、检测到猪肉出屠宰场全程的信息化管理。系统将IC卡作为信息载体,信息对接肉类批发市场、标准化菜场,实现生猪来源对接肉品流向对接。

  (2)肉类批发市场(配送中心)流通安全信息追溯系统:系统从猪肉进场、分割、检疫、检测至猪肉交易全程电子化结算管理。通过IC卡上接屠宰场,下接零售终端。

  (3)零售终端信息追溯系统:系统对肉品进货验收,通过对批发市场(配送中心)的IC卡刷卡登记,菜场(大卖场)进货信息自动生成电子台帐、信息对接标签电子秤,信息最终通过标签电子秤输出销售凭证,实现零售环节猪肉信息追溯功能。

  (4)团体采购信息追溯系统:系统采用IC卡管理、进货备案、领料登记等方式,实现团体采购单位猪肉信息追溯。

  (5)猪肉流通安全数据中心:猪肉流通安全数据中心,是一个数据汇集、处理的中心平台,信息包括:本市生猪定点屠宰场猪肉流通信息、外省市生猪屠宰场进沪猪肉流通信息、本市肉类批发市场猪肉流通信息、标准化菜市场猪肉流通信息、大卖场猪肉流通信息。实现全市猪肉流通环节的监管、追溯、查询、分析功能。

  (二)蔬菜追溯体系

  蔬菜商品追溯关键是针对经营者散而多、蔬菜品种多而杂的现状,如何解决批发市场蔬菜来源信息对接流向信息,是实现蔬菜追溯技术关键。

  1、技术模式

  系统采用技术成熟、成本可控、以智能CPU卡(大容量)为信息传递载体,标签电子秤作为信息追溯输出终端;信息通过互联网、企业局域网、智能CPU卡、批发市场交易终端、标签电子秤有序集成;以蔬菜批发市场信息采集、电子化结算为基础;将来源信息对接流向信息,实现蔬菜流通信息可追溯。

  批发环节与零售环节信息对接采用CPU卡为信息载体,将不同环节信息对接。批发环节采用CPU卡、流动工控级交易终端、地磅交易一体机、电子化结算平台有序集成;终端环节采用CPU卡、蔬菜溯源电子秤;从而实现蔬菜从批发、零售、消费者信息全程跟踪,达到蔬菜流通信息可追溯。

  通过大容量CPU卡解决经营者散而多与蔬菜品种多而杂的问题,通过电子化结算实现批发市场蔬菜来源信息对接蔬菜流向信息,从而实现信息可追溯。

  2、蔬菜追溯主要流程

  (1)批发市场蔬菜流通安全信息追溯系统:通过建立从蔬菜进场登记、蔬菜农残检测及蔬菜交易的全程信息管理,达到蔬菜流通的信息追溯要求。子系统以批发市场蔬菜来源产地证、检测合格证为蔬菜来源依据,以批发市场交易凭证、CPU卡为蔬菜流向依据(卡单同行),确保来源与流向信息相关联。

  (2)标准化菜市场蔬菜流通安全信息追溯系统:通过在标准化菜市场对蔬菜进货验收,与批发环节CPU卡信息载体对接,在标准化菜市场通过刷卡自动生成进货台帐。最终通过电子秤打印蔬菜销售凭证。以交易凭证(批发市场开具)、CPU卡为蔬菜进货依据,确保销售凭证具有可追溯。

  (3)团体采购蔬菜信息追溯系统:系统采用CPU卡管理、进货备案、领料登记等方式,实现团体采购单位蔬菜信息可追溯。

  (4)蔬菜流通安全数据中心:以蔬菜批发交易信息、经营者信息、检测信息为基础数据、以蔬菜来源信息、蔬菜源向信息为关键数据,来源信息对接流向信息。为政府提供监管、追溯、溯源、分析信息源等。

  今年逐步将肉菜流通安全数据中心整合为统一的追溯系统信息平台。

  三、 乙方进场经营期间,必须服从市场管理人员的管理,并遵守《东联商业广场管理制度》、《东联商业广场安全

  防火管理责任守则》等有关规定和承担相关责任,亮证经营。

  四、 乙方经营期间,必须自觉遵守国家法律、法规,文明经营,诚信有礼,不欺行霸市,不哄抬物价,不短斤缺

  两。

  五、 乙方在经营期间不得在档位内、档前、空中和在间墙上悬挂、堆放杂物或用其他非原档位交付使用的物品平

  压和垫高台面。

  六、 不得在场内售卖假冒劣质产品和国家明令禁止贩卖的受国家保护的珍稀动、植物。

  七、 乙方不准档前超越,乱占摆卖,加货架展示,在营业时间内所有档/铺的物品商品必须在乙方租赁范围内摆放,

  不得在通道内停放、摆卖,违反者甲方将按有关管理规定进行处理和追讨乙方由此而造成甲方的经济损失,并处予以500元/次的违约金,违约金将在乙方保证金内直接扣除,合同期内超过3次的视乙方违约,甲方将与乙方解除租赁合同,保证金不予退回。

  八、 乙方在市场经营期间必须做好防火、用电安全工作,并经常定期检查、维护,不准在档位内乱拉接电线和用

  明火煮食,若有违反,甲方将视情节作出相应的处理,情节严重甲方有权追究乙方的法律责任和追讨相应的经济损失。

  九、 市场的经营开放时间为早上 06:30到晚上 20:00,乙方必须按时开档营业,乙方未经甲方书面同意,连

  续2天不开档营业,发口头警告,连续4天不开档营业,发书面警告并罚款 200 元,连续7天不开档营业,当乙方弃租处理,解除租赁合同,甲方有权将档位另租他人使用。

  十、 每晚 20:00为清场时间,清场后,不允许任何经营户停留在档内,如确有需要,则须办理有关登记手续并

  获批准后方可,否则市场若遗失的财物由乙方负责赔偿。

  十一、 乙方进场经营期间,必须自觉维护场内交通畅通,不准在通道上停放车辆,堆放杂物。

  十二、乙方经营期间必须自觉维护场内卫生清洁工作,做好门前“三包”,不准随意乱抛、制造垃圾(菜渣、动物、

  鱼尖内脏),并自觉用垃圾桶收好,统一清理。

  十三、毛鸡行业,严禁用明火、沥青加工脱毛,烧腊行业严禁售卖生、鲜鸡及其内脏,避免生熟混合经营。

  十四、进场经营新鲜猪、牛、羊肉和冰鲜鱼类产品的业户必须出示当天进场售卖商品的“检疫证明“和《检疫监管

  证明》方可进场售卖。如有违反,甲方有权向乙方提出追讨因此而带来的经济损失和追究相关责任。情节严重者,甲方有权取消其经营资格,解除合同,收回档位。

  十五、本协议与《租赁合同》均具同等法律效力。

  为了确保东莞市×××装饰工程有限公司员工食堂食品安全、卫生及优质、优价,实现供求双方诚信、互利,乙方;现在据《中华人民共和国合同法》及相关法律规定,甲乙双方经平等、友好、自愿、协商一致,就乙方为甲方员工食堂配送肉类、禽类、蔬菜(以下简称食品)事宜,达成以下合同内容,以资双方共同遵守。

  一、乙方应遵守国家和地方有关的环境和卫生标准,确保食品的新鲜和卫生, 保证送到甲方食

  堂的肉品、屠宰品必须符合国家《肉与肉制品卫生管理办法》要求并且要有国家专门部门的检验证明;蔬菜必须是新鲜蔬菜,严禁供应腐烂变质的食品,如因乙方送货质量问题造成甲方人员食物中毒、发生食品安全事故等后果,由乙方负全部责任。

  二、乙方送货到甲方指定地点后,甲方派专按照合同规定严格验收、过秤、点数入库,在验收

  过程中如果有争议,由双方在接到货物的当天积极去解决。乙方在交货时掺杂使假、以次充好等情况、甲方有权拒收该食品,并要求乙方赔偿。

  三、乙方送货时应随货送上一式多联的送货清单,甲方每天派人验收、过称、核对、入库后签

  字确认,计算出每天金额,作为乙方送货凭证。

  四、甲方负责在每周日下午18:00之前,将下周菜谱传送给乙方,并派专人在每天下午18:

  00前以书面、手机短信或电话等方式将第二天就餐人数及需要采购的食品数量报给乙方(内容包括名称、数量、质量及特殊要求),以便乙方采购、供货。因食堂会有突发事件、需要更多食品,甲方专门负责人必须至少提前2个小时与乙方联系进行增补计划(但追补计划每天不得超过两次)。

  五、乙方须在每天上午7:30—8:30,将甲方所订购的蔬菜送到指定甲方指定食堂;乙方送货

  时间超过30分钟以上,乙方向甲方支付相当于当天货款10%作为违约金(个别品种因缺货而不能按时送到,乙方应及时告知甲方并协商解决,以保证甲方所需蔬菜按时送到)。

  六、甲方员工的伙食标准是每人每餐3.5元人民币,两荤一素一汤,乙方须按此标准进行配菜

  送货,佐料类由甲方自行购买。

  七、乙方所送的食品,必须保证质量,价格根据市场行情,涨跌合理定价,根据同样、同等肉

  类、蔬菜规格,不能高于市场价,如甲方发现蔬菜价高于市场,甲方有权按高出市场价的10倍处罚,并在当月的蔬菜货款里在次扣出1000元,做为处罚,因季节性及风暴等自然

  灾害,部分蔬菜的价格上涨幅度过大,乙方无法承担,需临时调整价格时,应先书面或电话通知甲方,经双方协商确认后调整。

  八、乙方提供的食品经双方代表结算确认后,于每周三与甲方核对、结算上周供货价款。

  九、甲方提供的菜单因自然因素或其他不可抗力而产生的缺货现象,乙方应在第一时间内向甲

  方反应情况,以便甲方及时的改变菜单,严禁乙方未经甲方同意擅自变更菜单。如乙方无故单方面变更菜单或停止送货的,每变更一次或每停送一天需赔偿甲方400元人民币,甲方直接从乙方货款中扣除。

  十、本合同期限自_______年____月____日至_______年____月____日止。在合作期间甲乙双方

  若要求提前解除该合同的,应提前15天书面通知对方。未经通知单方面终止合同的,须赔偿对方3000元。

  十一、 本合同自双方签字盖章后生效,本合同壹式贰份,双方各执壹份,均具同等法律效力。

  本合同未尽事宜,由双方友好协商解决,双方签署补充合同的,补充合同与本合同具有同等法律效力。经甲方指定代表签定的收货凭证,作为本合同的附件,与合同具有同的话能够法律效力。

  十二、 本合同履行过程中发生争议的,由甲、乙双方友好协商解决。经协商仍不能解决的,双

  方均可向甲方所在地人民法院起诉。
